Prepare oven for broiling (preheat.)</step> <step>Combine eggs with water until frothy and pour 2/3 into the hot skillet or frypan.</step> <step>Add cheese evenly, and dolop on the blue cheese dressing, picante sauce, olives, and onions. </step> <step>As the cheese melts, level the top surface and add the remining 1/3 of the egg mixture.</step> <step>Place under broiler to continue cooking until bubbly and brown.</step> <step>Remove from broiler, and gently remove from skillet to keep the omelette intact.
